This is the best tater tot breakfast casserole that Lauren makes for every holiday morning!

 

 

I make this for every holiday morning-- Easter, Thanksgiving and Christmas. It's delicious and filling so it keeps my family from being hungry until it's time for the big meal. They are so used to having this on holiday mornings, I think they would feel it wasn't a holiday without it. I love how it keeps bellies full so I can keep cooking in the kitchen. No more asking, "When are we eating?" 

 

Lauren's Holiday Breakfast Tater Tot Casserole

 

8 eggs

1/2 cup milk 

1/2 teaspoon salt

1/2 teaspoon pepper

1/2 teaspoon onion powder 

1 package ground breakfast sausage (mild or spicy if you want heat!)

1 small yellow onion, diced

2 cups shredded cheddar cheese, divided

1/2 cup monterrey jack cheese

1 package frozen tater tots (keep in freezer until it's time to add them!)

Preheat oven to 350. Brown sausage. Remove from pan with slotted spoon. Saute onion. Mix eggs, salt, pepper, onion powder, sausage and onion. Add in 1/2 the cheese at the end. Spread in 9x13 casserole dish. Carefully line tater tots in pan. Sprinkle top with salt. 

Bake at 350 for 40 minutes or until golden. Add remaining cheese on top and bake until melted. Serve and enjoy!
